Fueling Work with Quinoa Salad with Tortilla Chips

Our work meetings these days are more often in person than virtual, and it is way more enjoyable if there is food involved. On this day, I brought a chilled quinoa salad that I thought would be refreshing during these humid summer days. I thought it was a perfect light and healthy snack to keep us fueled for our meeting.

It is super easy to make and you can modify the ingredients and flavors any way you want. I cook a cup of quinoa in the rice cooker. After it cools off a bit, I toss it in a bowl of various vegetables. For this one, I mixed it with cucumbers, zucchini, tomato, onions, garlic, and corn. I seasoned it with EVOO, apple cider vinegar, salt, pepper, red pepper flakes, paprika, cumin, some fresh lemon juice, and some shakes of Everything But the Bagel Seasoning. I like eating it with Wheat Thins but since I had tortilla chips on this day, that is what I brought to my meeting. I also highly recommend that you bring hot sauce to add some zing to the salad.
