King’s Vietnamese Food Truck for Melinda’s Bday

Melinda’s birthday was a great excuse to get together. We have been so busy with work, life, and our separate pursuits and we haven’t had time to sit and chat together for a long time. We decided on a Vietnamese lunch from King’s Vietnamese food truck. I called in our order at 9 a.m. and requested that my order be ready for pick up at 11:30 a.m. Melinda and I got to the food truck on Manono Street a little before 11:30 and our food was ready at 11:38. Next stop was Ratana’s for a work errand to get Melinda a Thai iced tea and I was so happy to find out that my pal Trevor now owns Ratana with his girlfriend!

The next stop was Sharon’s workplace where they have a lovely picnic table that was perfect for us to sit, dig into our food, and catch up. The three of us inhaled pork banh mi, chicken banh mi, Vietnamese pancakes (formed like a taco), vermicelli salad, and summer rolls while we chatted about our lives and our children’s lives. What a great way to start the week. Living Hilo Style.
