Garden to Table — Eggplant and Basil

My garden is slowly coming along. I have a few eggplant plants that are starting to produce. I have the purple one that I think is the Waimanalo Long variety and I have a green one that I have no idea about the name. My family likes the green one a lot.

I also have some basil plants and lots of green onion plants.

I had some chicken in the freezer so I decided to make a chicken, eggplant, basil stir-fry. I found a recipe on The Woks of Life website had the flavors I wanted to have in this dish.

I loved it and so did my family — except for my non-vegetable eating son. Living Hilo Style!
