My friend Tina hosted a summer kick-off party. I got busy and wasn’t able to post this earlier so here it as we head into the fall. Anyway, some of my soccer mama pals decided to get together to kick summer off on the right note. We each brought something to share while we chatted about summer plans and everything else under the sun and moon. This is how our menu came together for this party.

I love how we each bring what works for us and our schedule that day and how it comes together to an amazing feast!

In addition to the chips and dip, I brought a salad. I just threw some veggies, capers, olives, and Feta cheese together to make a Mediterranean salad and tossed it with EVOO, lemon juice, a splash of white vinegar, salt, and pepper. It’s colorful, refreshing, and most importantly, quick and easy to make.
This evening was a great way to kick off summer of 2019! We celebrated a birthday, a retirement, and our appreciation for our friendships. Living Hilo Style.
