I used to have so much trouble growing basil because the leaves would always get brown and sickly looking. I finally got my hands on some basil seeds that are supposed to be resistant to downy mildew and it seems to work in my backyard. My basil germinated and are growing. As the basil flowered, I used to get it to root and then I planted those cuttings. Guess what? I now have so much basil, I don’t know what to do with it. If you have a rabbit that loves to eat basil, let me know and I’ll provide some basil treats for your rabbit. In the meantime, I figured the best way to use up a lot of basil is to make pesto.
Since I’ve never had success growing basil in the past, I’ve never made my own pesto but I tried it. I just threw in a bunch of washed basil leaves in my food processor with some extra virgin olive oil, grated Parmesan cheese, pine nuts, and some salt that was it. Now, I have to figure out what to do with all the pesto. I could freeze it but my freezer is getting full and the basil is growing back and I’ll have to make more fresh pesto soon!
