My friend celebrated a birthday with a Mexican-themed party. There even was a taco pinata!
I am in the midst (again) of trying to eat healthily and decided to make a recipe I found called Mexican Chopped Salad. Like all the other “recipes” I share, this one just calls for chopping and mixing. I found the original recipe on www.thecafesucrefarine.com. It tastes fresh and healthy! I modified it a little based on the time and ingredients I have access to.
Mexican Chopped Salad
Ingredients:
Dressing:
1/4 cup lime juice
2T honey
1/2 teaspoon cumin
1 clove garlic, finely minced
4 T EVOO
salt and pepper to taste
Salad:
2 bell pepper, diced
1 medium red onion, diced
1 large zucchini, diced
4 tomatoes, diced
1 large can corn, drained
1 regular-size can corn, Southwestern style
1 can black beans, drained and rinsed
1/2 cup cilantro, chopped
Combine all ingredients. Colorful and tasty. Just serve with tortilla chips. Perfect for a Living Hilo Style potluck party!
