Kerri makes a yummy stuffed salmon that is great for potlucks. I asked her for the recipe. She told me there is no recipe which really means there are no measurements. Which is perfect because that is how I cook too.

Kerri told me she mixes imitation crab, mayonnaise (Best Foods, of course), chopped onions, green onions, and some panko to hold the mixture together. I also add thinly sliced shiitake mushrooms (the fresh ones that I find at KTA) and some wasabi to the mix. Just debone and salt the salmon and then put the stuffing on top and bake it for about 20 minutes at 325 degrees.

At the end, turn up the heat so that you get some browning on top. Perfect easy recipe for a potluck.
Kerri hosted a gathering at her house recently and I made her salmon dish to take to her house. It must have come out okay because I had a couple of requests for the recipe that night. In addition to the salmon, we enjoyed several nabe (hot pot), assorted fried yumminess from Aomatsu, ham, Dorito salad, somen salad, natto cocktail, and so many desserts! Living Hilo Style!
