Potlucking with a Stuffed Salmon with Kochujang

I love making Kerri’s Deluxe Stuffed Salmon for potlucks. It is easy and people love it. Since I just came back from Seoul recently I thought that I would add some Korean flavor to this recipe so for a Friendsmas gathering. I mixed initiation crab, Best Foods mayonnaise, chopped onions, chopped green onions, panko, chopped shiitake, and a couple of tablespoons of kochujang. After deboning the salmon and placing it in a baking dish, just cover the salmon with the mixture and bake for about 20 minutes at 325 degrees. When it’s done, just turn the heat up and bake a few more minutes to get some browning on top and it’s ready to serve. I forgot to take a photo of it but the people at the potluck enjoyed it.

We also enjoyed poke, cheese, Millie’s Diner pasta salad, fried won ton, quinoa salad, Thai green curry, ham, baklava, bread pudding, and wine–lots of wine. We had a hilarious time with our grab bag games one of which included BINGO! I came home with a harmonica, a cheese board/knife set, face masks, and truffle oil! So fun! Living Hilo Style during the holidays!
