I was blessed with sweet potatoes from Kanani. I usually steam my sweet potatoes and keep them in my fridge as a meal prep item. But since I’m working from home and experimenting with recipes during my breaks from work, I decided to try cutting them into strips, tossing it with olive oil and garlic salt, and then throwing them into the air fryer. I found this Big Island Now recipe to guide me. I put the seasoned potato strips on two trays and popped them in my Instant Vortex Plus for about 12 minutes.
If you like yours on the crispier side, make sure to make your slices thin. If not, a thick slice is delicious too. I like the sweet and salty combination — and it makes me think I’m being a little healthy. Living Hilo Style.
