Thai Cooking: Shrimp, Eggplant, Basil Stir Fry

I took a Thai cooking class from AirBnB recently and found a stir fry recipe I really liked. Of course, it has to be simple for me to like it. You can choose any kind of protein or none at all. In fact, I made this with just eggplants and with just bok choy once and it was delicious. But I like it best with shrimp.

If you like spice, get as many chili peppers as you like and crush it with about 2-3 cloves of garlic. I like to add my heat later so that others who may not like the spice can also enjoy the dish. Heat a pan and add the garlic (and chili) until the garlic gets yummy brown. Add some sliced eggplants and about 1/2 a pound of cleaned/shelled shrimp. Add about 2 T of oyster sauce, 2 tsp of shoyu, and 2 tsp of sugar to the pan.

Adjust seasoning to your liking. At the end, add in about 1/2 cup of holy basil. My holy basil is only a few millimeters tall so I substituted with a mix of Thai and regular basil from my garden and my family loved it. I think you can cook anything in the oyster/shoyu/sugar sauce and it will be yummy. Living Hilo Style.
