Tomatillo Rice with Hawaii Eco and OK Farms

I recently got a CSA Farm Box from Hawaii Eco with some tomatillos and cilantro both grown in Volcano from Ahuimanu Farms in it. Hawaii Eco shared a recipe for tomatillo rice which was handy since I had never tried tomatillos before. I had almost everything on the ingredient list so I decided to try it. I think I had around 1 pound of tomatillos. I took off the husks, washed, and then boiled the tomatillos in water for around 5 minutes until they were soft and mashable. While the tomatillos were boiling, I minced 4-5 cloves of garlic and two Hawaiian chili peppers. I drained the tomatillos and in a bowl, mashed them up, and then put them into my rice cooker pot and added the garlic and chili peppers. I added around 3 cups of jasmine rice which is the long-grain rice I had at home and just added enough chicken broth to cook the rice.

After that, all I had to do was press the button to cook the rice and wait. When it was ready, I served it with some sliced chicken and chopped cilantro. Adding some yuzu hot sauce from Trader Joe’s was the perfect addition. My husband loved it! Mahalo Hawaii Eco and OK Farms for the farm box! Living Hilo Style.
