Are you still recovering from Merrie Monarch? Do you have some leftover kalua pig? Make this!
Kalua Pork Lumpia
Ingredients:
½-1 lb. leftover kalua pork, shredded
1-2 C. Shredded cabbage (I used purple cause I had it)
½ medium onion, chopped
1 clove garlic, minced
1 pkg. Menlo brand frozen lumpia wrappers, thawed (trust me, please buy this brand so you don’t go cray)
1 egg, beaten (use to seal lumpia wrapper)
Oil for frying
Method:
- Cook kalua, cabbage, onion and garlic as if you were making kalua cabbage.
- Place about 2 tablespoons of kalua filling on a lumpia wrapper and fold like a spring roll (follow the picture on the back of Menlo package!) and seal with egg wash.
- Fry in 350-360 degree oil until golden.
- Drain on paper towel.
- Serve with sweet chili sauce (like Jackie Rey’s) or leftover lomi lomi salmon.
