My Japanese cucumber vine has been doing well lately. I’ve made a fake cucumber kimchi that my family loves. When I make it next, I’ll take pics and post the ‘recipe.’

Today, I wanted to try something different and gimmesomeoven’s Thai Cucumber Salad blog post came through my email inbox. I love Thai food and I had a cucumber I needed to do something with so it was the perfect time to try this recipe. First I made the dressing. I adapted the recipe slightly.
Dressing
juice from one fresh lemon
2 T olive oil
1 T fish sauce
2 T rice vinegar
2 cloves minced garlic
1 T locally made honey
1 T shoyu
sprinkling of garlic shichimi togarashi
After mixing the dressing ingredients in a bowl, I added the following things to the dressing.
one cucumber, halved, seeded, and sliced
about half of a thinly sliced sweet onion
1/2 cup chopped cilantro

That is it! I chilled the mixture in the refrigerator and served it for dinner later that evening. So quick and easy. Living Hilo Style–Garden to Table.
