Shelter-In-Place Pot Roast

I haven’t made a pot roast in a while. Since KTA had a sale on chuck roast, I bought one and experimented with Ree Drummond’s Perfect Pot Roast recipe. My roast was just a bit smaller than 3 pounds but it would be enough for my family. This is another easy recipe! Just season the roast with salt and pepper. I used a enamel cast iron pot and browned one peeled/halved onion and put it aside. Next, I browned some chunks of carrots and did the same. Finally, I browned the roast on all sides and put it aside.

I used about a cup of beef broth to deglaze the pot and then added the roast and veggies back to the pot. It smells so good at this point! I also added some thyme and some sprigs of rosemary from my garden.

I put the pot into a 275 degree oven and roasted it for just under 3 hours. It was yummy.

I think you should roast your pot roast for about an hour for each pound it weighs. I made some gravy with the broth and that is it. Super easy recipe. You just have to have the time. The leftovers made for a great sandwich the next day. Living Hilo Style.
