Safer-at-Home Greek Night

I got an email newsletter from Damn Delicious reminding me about her recipe for Greek Chicken Kabobs. I am always looking for healthy dinner ideas and this one piqued my interest. I like Greek food and had never made this at home before.

I had most of the ingredients at home so this was an easy one to make. Instead of making kabobs, I just marinated chicken thighs in the marinade and then put the thighs in my Instant Vortex Plus air fryer. One modification I made for the marinade was to use a lemon pepper spice in the marinade.

I prepped some veggies to go with the chicken by roasting slices of zucchini, eggplant, and shiitake. I used the marinade for these veggies as well. I also sliced cucumbers, tomatoes, and onions to go with the chicken and roasted veggies. I put everything on a large platter with dips of hummus and tzatziki with some pita chips as well as pita bread for a gyro option. What an easy and refreshing dinner on this hot day in Hilo. It was a hit and there were no leftovers. Next time, I’ll make more so that I will have the ingredients to make a perfect gyro for the next day. Living Hilo Style.
