I finally got motivated to do some office work today and realized after about four hours that I forgot to have breakfast and lunch time was quickly passing. I went to the fridge and freezer to see what I had that would be quick and satisfying, but not too heavy as to spoil dinner (we’re having avgolemono soup and seared calamari!).

I stumbled upon a packet of frozen rice cakes I’d found at Kilauea Market when I went in to buy a bamboo steamer to make manapua (#PandemicLearning). These little gems are somewhat hard to find and this was the first time I’d seen them in a store here. Grabbed a handful from the bag and stir fried them in a sauce of sesame oil, Chinese black vinegar, shoyu, gojuchang, and just a drizzle of local honey at the end. Perfect lite snack to keep me focused but not fill me up.
