I received some beautiful baby bok choy grown by Hamakua Forest Farms in my Hawaii Eco farm box. I have been trying to cook up thing s that I have in my kitchen/pantry and I have been craving noodles as I always do. I love noodles. I got a pack of Sapporo Ichiban from the pantry and boiled it without the seasoning.
In a pan, I fried garlic, onion, baby bok choy, and kimchi in a pan. When the veggies were ready, I added the cooked noodles to the pan and sprinkled the seasoning over everything and tossed it together. Shiitake mushrooms would have been a delicious addition as well as Spam. I didn’t have the mushrooms and didn’t want to open a can of Spam so this was it.

If you don’t want it spicy, skip the kimchi. It was a yummy lunch that was quick and easy to prepare and served two people. Living Hilo Style.
