I had a beautiful papaya in my Hawaii Eco farm box that was grown at the Johnson Family Farm. My daughter and I enjoy eating fresh chilled ripe papaya with some lime juice squeezed on it but I wanted to try something different today. I found a recipe online called Kumu Farms’ Papaya Fruit Crisp Recipe and decided to try it. It looked pretty simple which is just my style.
I put a chopped ripe papaya into a glass baking dish and since I had a banana, frozen strawberries, and frozen mango, I added that to the mixture. I topped the fruits with a mixture of equal parts flour and sugar with about a teaspoon of salt and about 1/3 cup of butter. I eyeballed the ratios for the amount of fruit I had. I just popped into my oven at 375 degrees for about 50 minutes. When I saw the crust getting brown, I covered it with foil so that the crust wouldn’t burn.

This warm dish would be perfect with vanilla ice cream but since I didn’t have that, I enjoyed it with a dollop of K’s Drive In lychee twist ice cream. It was perfect! Living Hilo Style.
