I had a beautiful homegrown kabocha ready to to cook. I also got my Hawaii Eco farm box delivery with a container of Alii mushrooms from Hamakua Mushrooms in it. On the previous day, I roasted slices of kabocha with some salt, olive oil, and Parmesan cheese and my family enjoyed it. Since I had some leftover salami and the beautiful mushrooms, I decided to add that to the mix. It is a super easy recipe. Just slice some kabocha into your desired size and add sliced mushrooms and salami. Drizzle some olive oil, sprinkle some salt, and be generous with Parmesan cheese and toss.
I put this in my Instant Vortex Plus air fryer at 400 degrees for about 10 minutes and it is ready to eat. The sweet kabocha with the salty salami was a winning combination. Living Hilo Style.
