I love Thai food and a recipe for Thai Cucumber Salad from Jo Cooks came into my email inbox. I also fortuitously got some Hamakua Farms cucumbers and a lime in my farm box from Hawaii Eco and O.K. Farms. I had some cilantro and some ripe Hawaiian chili peppers growing in the garden.
This is such an easy recipe! Just slice up cucumber, onions, and cilantro and add some crushed peanuts. I used one Hawaiian chili pepper in place of a Thai chili. The dressing is just sesame oil, fish sauce, garlic, sugar, and salt. And I was so happy to use my fresh lime. Just mix everything together and let it sit in the fridge for about 30 minutes and it is ready to eat.

It is a refreshing salad to enjoy on a hot, late summer evening. Living Hilo Style.
