What duya do with ‘Nduja ?

My friend made an order from Kaunamano Farms recently and shared some ‘nduja (pronounced en-doo-ya) with me. Kaunamano Farms describe this product as a mild and smoky spicy Italian pork spread seasoned with ancho chile, cayenne pepper, and garlic, finely pureed. According to the website, the farm’s vision is to bring high-quality, local meat directly to your door. Brandon Lee and Keoni Regidor who own Napua Restaurant at the Mauna Lani Beach Club participated in a Kamehameha Schools competition in which they garnered a second place award and $15,000 and 20 acres. That was the start of the farm.

The ‘nduja is sourced from the farm’s Royal Berkshire herd raised in Honoka’a and the herd is pasture-raised, hormone and antibiotic free and fed a variety of organic foods including ‘ulu, bananas, papaya, and mac nuts. At Napua, they serve the spread on a bread with pretty pickled veggies. I ordered some ‘nduja and had it shipped to me since I didn’t have plans to go to Waikoloa and couldn’t pick it up from Napua. I put the spread on some bread with a dollop of crème fraiche and a drizzle of lilikoi butter for a sweet, creamy, slightly spicy combo. It is a great pupu!
