Daikon Green Tsukemono with Shiso Garlic Shoyu

I had a bunch of shiso from my garden that I soaked in shoyu and some sliced garlic. I also was gifted a bunch of daikon greens from a friend’s garden. I decided to make a tsukemono with these two ingredients. I diced the daikon greens and let it sit in about two teaspoons of salt. After about an hour, I squeezed out the water from the greens and then mixed in the chopped up shiso with some of the shoyu it was soaking in.

This is good over some hot rice or even some cold tofu. Living Hilo Style.
