I was scrolling through my Instagram feed one day and saw my friend post a picture of a delicious looking bruschetta. I mean–bread, cheese, tomatoes. How can one go wrong?

I asked her for the recipe and she willingly shared it. It requires only four ingredients. Bread, olive oil, mozzarella, and sun-dried tomatoes. I asked her for the recipe and she willingly shared it. It requires only three ingredients. Bread, mozzarella, and sun-dried tomatoes. I had I had a Costco baguette at home. I also had sun-dried tomatoes from Italy that my friend brought home for me. All I needed to get was the mozzarella.

I sliced the baguette and brushed olive oil on it and baked it in the oven for about 10 minutes. Then I put the sliced mozzarella and sliced sun-dried tomatoes on it and baked it for another 10-12 minutes until the cheese gets soft.
And that’s it!

Just transfer to a platter and serve while the cheese is warm and gooey! Perfect for your Hilo potlucks this holiday season. Living Hilo Style.
