Shelter-In-Place Instant Pot Pulled Pork

My son reminded me that we have not eaten pulled pork sandwiches in a while. I used to buy the ready made entree from the store and serve it with sweet bread rolls. We had a bag of sweet bread rolls so I decided to try and make my own pulled pork. I found a recipe on Gimme Some Oven’s blog for Instant Pot BBQ Pulled Pork. I bought a hunk of pork shoulder and then cut it into 2-inch cubes. I combined paprika, brown sugar, garlic powder, black pepper, mustard, and smoked salt and rubbed it all over the pieces of pork and put it in a Ziploc bag and put it in the fridge for a few hours.

When I was ready to cook, I used the saute feature on the Instant Pot to brown the pieces of pork. Once I finished browning the pork, I added a cup of water to the IP with about a cup of store-bought BBQ sauce and added the pork to the mixture. I set the IP to Manual for 60 minutes. When the pork was done, I took out the pork as instructed to shred and then simmered the sauce on the saute feature for about another 10 minutes until it thickened.

Once the sauce is thickened, you can pour it into a bowl and add the shredded pork to it and serve. If needed, you can add more BBQ sauce to the pork.

I served it with sweet bread rolls, baked beans, and a green salad. It was pretty easy! And my son was happy. Living Hilo Style.
