In my game of chopped today, I found a pack of Kaunamano Farm ground pork in my freezer and an eggplant and a tub of Oshiro tofu from KTA in my fridge and decided to make a dinner dish with this. I marinated the ground pork with the last of my Trader Joe’s Chili Onion Crunch sauce, some shoyu, and some cornstarch. I coated the eggplant with some oil and seasoned with salt and air fried it for a little while. While the eggplant was in the air fryer, I started cooking the ground pork on the stove with some oyster sauce, shoyu, sriracha, and crunchy garlic rayu. When the pork was browned, I added the tofu and partially cooked eggplant and mixed it all up until the eggplant was nice and tender.

It was delicious! The family loved it. Living Hilo Style.
