Want an easy dessert that kids and adults will devour? Chocolate-dipped fruit is always a winner! It’s quick and easy and you won’t have to turn on your oven during hot Hilo days! Here’s how you do it:
Ingredients:
1 basket of strawberries, rinsed and dried (about 15 pieces)
1 basket of cherries, rinsed and dried (about 30 pieces)
1 pkg. Dried Mediterranean apricots (about 15 pieces)
1 pkg. (12oz.) Ghirardelli semi-sweet chocolate chips
Method:
- Rinse the strawberries and cherries in a colander. Dry each piece of fruit and lay it on a tea towel to air-dry.
- Melt about half of the bag of chocolate chips in a microwave safe bowl for about 30 seconds. Mix the chips around and microwave for 30 more seconds. The chips should be mostly melted. You may have to melt more chocolate (or the entire bag!) to dip all of the fruits.
- After the chips are completely melted, dip one piece of fruit at a time and lay flat on a parchment lined sheet pan.
- Refrigerate for at least 20 minutes to set the chocolate.
- Keep refrigerated until ready to serve.

That’s it, only easy!
Thank you for the recipe….always looking for something easy to make the kids.
