Only Easy: Post-Merrie Monarch Poi Patties

Wasn’t Merrie Monarch Week amazing?! Hilo was definitely “lit” last week! Did you get to eat some Hawaiian food? If you have some leftover poi, perhaps you could make this. I’m not gonna lie, this was an expensive side dish because I wanted to make it so badly I used fresh poi. The frugal side of me will only make this when I have leftover poi next time. I’d also try to make it with Bisquick, cheaper. I wonder how it would taste if I added kalua pig to the patties? Or would it overpower the subtle taste of the poi? Hmmmmm

Poi Patties

1 C. poi
2 C. taro pancake mix (or Bisquick)
½ – ¾ C. onion, chopped
½ – ¾ C. green bell pepper, chopped
1 tsp. Salt (or to your taste)
all-purpose flour – to help form the patties
½ C. oil for frying

Mix the poi, pancake mix, onions, bell peppers, and salt together. Form into 3” patties and dust each patty with flour, mostly so the patty does not stick to your hands. Fry in hot oil until golden brown.

Note: I tried making a smaller size patty too and it was not as good, stick with 3”.

That’s it, only easy!
