Only Easy: Confetti Butter Mochi

If you are in need of a colorful dessert perhaps you could try making this. It’s verrry easy!

Confetti Butter Mochi


1 box mochiko (about 3 cups)
3 C. sugar
½ C butter, melted
5 eggs, beaten
1 T. baking powder
1 (12oz.) coconut milk (mine was 13.5 oz., didn’t use the entire can)
1 tsp. vanilla extract
⅓-½ C. rainbow sprinkles


  1. Preheat oven to 375 degrees.
  2. Melt the butter in the microwave if needed
  3. In a large bowl, add the melted butter to all of the remaining ingredients and mix well.
  4. Pour mixture into a greased 9”x 13” pan and bake for 1 hour.

That’s it, only easy!
