One day, I had some leftover Costco rotisserie chicken in the fridge. I also had some black truffle burrata and Roma tomatoes that I got from KTA. I went into my backyard garden and found some butter lettuce, arugula, and basil and made my lunch!
I just drizzled some olive oil, balsamic vinegar and some salt and pepper on top and that was it! It felt healthy while still being a little bit of a decadent treat to break up a long day of working from home. Living Hilo Style.
