Only Easy: Fuji Apple Cake

This cake isn’t pretty but it makes up for its ugliness in taste. If you have an abundance of apples this cake is a great way to use it. I love how the apple pectin caramelizes, so yummy. One of my all-time favorites, I hope it becomes one of yours too!

Fuji Apple Cake

Ingredients:

5 cups Fuji apples (or whatever apples you have on hand), skin on and chopped
2 C. white sugar
½ C. vegetable oil
2 eggs, beaten
2 tsp. vanilla extract
2 tsp. cinnamon
2 tsp. baking soda
2 C. flour, sifted
½ tsp. salt

Method:

  1. Preheat oven to 350 degrees.
  2. Mix the apples, sugar, and oil together. Let sit for 10 minutes.
  3. Mix in the eggs and vanilla.
  4. Sift the dry ingredients, add to wet and mix to combine.
  5. Add batter to a greased 9 x 13 pan and bake for 1 hour.

That’s it, only easy!
