This cake isn’t pretty but it makes up for its ugliness in taste. If you have an abundance of apples this cake is a great way to use it. I love how the apple pectin caramelizes, so yummy. One of my all-time favorites, I hope it becomes one of yours too!
Fuji Apple Cake
Ingredients:
5 cups Fuji apples (or whatever apples you have on hand), skin on and chopped
2 C. white sugar
½ C. vegetable oil
2 eggs, beaten
2 tsp. vanilla extract
2 tsp. cinnamon
2 tsp. baking soda
2 C. flour, sifted
½ tsp. salt
Method:
- Preheat oven to 350 degrees.
- Mix the apples, sugar, and oil together. Let sit for 10 minutes.
- Mix in the eggs and vanilla.
- Sift the dry ingredients, add to wet and mix to combine.
- Add batter to a greased 9 x 13 pan and bake for 1 hour.
